Herb Stuffing

Stuffing
Herb Stuffing

1 lb ground turkey Or turkey sausage
1/4 cup finely chopped onion(I use more)
1/4 c chopped celery
2 eggs
2 cups coarsely chopped cauliflower
1/2 c diced yellow squash
1/2 c parmesan cheese
1 tablespoon parsley
3 tablespoons fresh thyme and sage
1 tablespoon minced garlic
salt and pepper to taste

Crumble turkey in pan and cook over medium heat. Add the celery and onion, stirring until browned.

Beat eggs in a bowl. Mix remaining ingredients in to meat mixture. Pour into a baking dish and bake at 350 for 30 minutes.

6 servings @ 6.5 fat, 8.4 carbs, 17.4 protein
